Guacamole
Yield: ~2 cups (6-8 servings)
Ingredients
3 ripe medium avocados, halved and pitted
1 clove garlic, minced
1 lime, juiced (~2 tablespoons of juice)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped cilantro (or parsley if you don’t like cilantro)
Procedure:
Using a spoon, scoop the avocado out of the skin into a mixing bowl. Mash avocado with a fork or potato masher, leaving it a bit chunky. Add remaining ingredients and mix until well combined. I recommend allowing the guacamole to sit for at least 30 minutes before serving to allow the flavors to develop. Taste before serving and add more salt if needed.
Optional add-ins: chopped red or white onion, sliced scallions, chopped tomatoes, chopped jalapeno pepper
