Shaved Vegetable Salad with Lemon Dill Dressing

Creamy Lemon Dill Dressing 

Yield: 2/3 cup 

Serving Size: 2 Tablespoons 

 

Ingredients 

1/4 cup extra virgin olive oil 

2 Tablespoons lemon juice 

3 Tablespoons plain Greek yogurt (I use 2% fat) 

1 teaspoon honey 

1 clove garlic, minced 

1/2 teaspoon sea salt 

1/4 teaspoon black pepper 

1 Tablespoon chopped fresh dill 

 

Procedure 

Add all ingredients to jar and whisk together until thoroughly combined.

Ingredients 

Creamy Lemon Dill Dressing (recipe above) 

Zucchini 

Yellow squash 

Carrots 

Radishes 

 

Procedure 

Wash and dry vegetables. Peel carrots. Using a vegetable peeler, create ribbons of the zucchini, squash, and carrots. Thinly slice the radishes. Toss vegetables in enough dressing to fully coat.
